Hen\u00fcz zeytinlere su y\u00fcr\u00fcmeden sert ve diri zeytinler dal\u0131ndan toplan\u0131r. Havan eli ile yada temiz bir ta\u015fla k\u0131r\u0131l\u0131r. Bu i\u015flemi par\u00e7alamadan, hafif\u00e7e vurarak, sadece zeytini \u00e7atlatma \u015feklinde olmal\u0131d\u0131r. Bir hafta sonra yeme\u011fe haz\u0131rd\u0131r. Her sabah yiyece\u011finiz kadar kavanozdan \u00e7\u0131kart\u0131n\u0131z, yoksa bekleyen zeytin karar\u0131r. Ye\u015fil yemenin zevki ba\u015fkad\u0131r. \u015eayet tuzu fazla ka\u00e7\u0131rd\u0131ysan\u0131z, \u00e7\u0131kartm\u0131\u015f oldu\u011funuz zeytinleri \u0131l\u0131k suda 1-2 saat bekletin, tuzunun hafifledi\u011fini hissedeceksiniz.<\/p>\n<p>Dilme Zeytin: Se\u00e7ilmi\u015f iri zeytinler b\u0131\u00e7ak ile en az \u00fc\u00e7 yerinden \u00e7izilir. Ya da baz\u0131lar\u0131 yemek \u00e7atal\u0131 ile delerler. Daha sonra suya konur, 3 g\u00fcn ara ile suyu de\u011fi\u015ftirilir, sar\u0131 su berrakla\u015ft\u0131ktan sonra, tekrar temiz suya, tuz, limon tuzu ilavesiyle bekletilir. A\u015fa\u011f\u0131 yukar\u0131 \u00e7eki\u015fte zeytin ile yap\u0131\u015f\u0131\u015f ayn\u0131d\u0131r. Zeytin yenece\u011fi zaman kavanozdan \u00e7\u0131kart\u0131lmal\u0131d\u0131r. Yoksa karar\u0131r. \u0130sterseniz suyunu s\u00fczer, bir cam kavanozu koyars\u0131n\u0131z. Ye\u015fil kalmas\u0131 i\u00e7in \u00fczerine tamamen \u00f6rtecek kadar zeytin ya\u011f\u0131 ilave etmelisiniz. \u00dczerine bir limonu dilimleyerek koyabilirsiniz. Kapa\u011f\u0131n\u0131 hava almayacak \u015fekilde s\u0131k\u0131ca kapatmal\u0131s\u0131n\u0131z.<\/p>\n<p>Hurma Zeytin: Yapaca\u011f\u0131n\u0131z kadar se\u00e7ilmi\u015f kara zeytinleri\u00a0(5-10 kg. olabilir) bir kendir \u00e7uval veya suyunu s\u00fczebilen torbaya koyars\u0131n\u0131z. Bu torbay\u0131 geni\u015f bir le\u011fen i\u00e7ine koyar, \u00fcst\u00fcne bir a\u011f\u0131rl\u0131k koymal\u0131s\u0131n\u0131z. 7-8 g\u00fcn sonra \u00e7\u0131kart\u0131p, \u0131l\u0131k suda y\u0131kar, tekrar torban\u0131n i\u00e7ine yeterince tuz ilavesiyle bast\u0131r\u0131rs\u0131n\u0131z. Bir hafta sonra tad\u0131n\u0131 kontrol edersiniz. Ac\u0131l\u0131\u011f\u0131 gitti ise yeme\u011fe haz\u0131rd\u0131r. Bu zeytinler, bir g\u00fc\u011f\u00fcm yada cam kavanoza koyar, \u00fcst\u00fcne zeytin ya\u011f\u0131 ilave ederseniz, uzun s\u00fcre saklam\u0131\u015f olursunuz.<\/p>\n<p>Ge\u00e7mi\u015f y\u0131llarda kuyularda hurma zeytin yap\u0131l\u0131rd\u0131. Art\u0131k \u015fu y\u0131llarda yap\u0131lm\u0131yor. 8-10 tonluk beton kuyu i\u00e7erisine zeytinler yapraklar\u0131ndan temizlenip, kuyuya d\u00f6k\u00fcl\u00fcr. En son \u00fczerine iri kaya tuzu ile tamamen kaplayacak \u015fekilde \u00f6rt\u00fcl\u00fcr. \u00dcste naylon ile ve a\u011f\u0131rl\u0131k bast\u0131r\u0131larak kendi halinde b\u0131rak\u0131l\u0131r. Kendi k\u0131z\u0131l suyu ile &#8220;Hurma Zeytin&#8221; olur.\u00a06 ay\u00a0sonra t\u00fcccara t\u00fcm kuyu zeytini sat\u0131l\u0131r. Art\u0131k bu uygulama g\u00fcn\u00fcm\u00fczde yap\u0131lm\u0131yor.
